A new edition to the Rancho Gordo-Xoxoc Project, this time from Chiapas. Negro de Suelo are small and dense, and the staff in our test kitchen finds them similar to Ayocote Negro. Like the Ayocote, they have a denser skin but a creamy interior, and a rich broth. They hold their shape well, making them ideal for salads.
