A unique Ayocote variety from San Jose Iturbide, Guanajuato, that offers a creamy texture while maintaining its shape during extended cooking.


Similar to Ayocote Blanco, this dense, flavorful bean has a thick skin and, when fully cooked, its creamy, starchy texture develops a delicate potato-like flavor.

Originally from Oaxaca, Mexico, the Ayocote family was one of the first cultivated crops of the Americas. They are grown all over central and northern Mexico, but are more prevalent in indigenous communities.
