Mancini uses circular bronze die plates and dries the Mezze Maniche at temperatures between min. 36°C and max 55°C, taking 22 hours. The result is premium pasta ready for a little butter and cheese or your most elaborate sauces. We tend to like them for pasta e fagioli!
